Method
- Heat the oven to 425°F. Mix the flour, baking powder and salt, then rub in the cold butter until pea-sized crumbs remain.
- Stir in the buttermilk until a shaggy dough forms. Pat to 1 inch thick on a floured surface and fold in thirds twice.
- Cut into 6 rounds with a floured cutter. Bake on a lined sheet for 15 to 18 minutes until golden.
- Brown the sausage in a large skillet over medium heat, breaking it up, about 8 minutes. Leave the drippings in the pan.
- Sprinkle the 1/4 cup flour over the sausage and stir for 1 minute.
- Slowly pour in the milk, stirring constantly. Simmer 5 to 7 minutes until thick. Season with pepper and salt.
- Split the warm biscuits and ladle the gravy over them.
