Beef and Bean Chili

Method

  1. Brown the beef in the oil in a large pot over medium-high heat, about 8 minutes. Drain excess fat if needed.
  2. Add the onion and pepper and cook 5 minutes.
  3. Stir in the garlic, chili powder, cumin, paprika and oregano. Cook 1 minute.
  4. Add the tomatoes, tomato sauce, beans, broth and salt.
  5. Bring to a boil, then reduce the heat and simmer uncovered for 45 minutes, stirring now and then.
  6. Taste, adjust the salt, and serve with cheddar, sour cream and chopped onion.
